[Docs] - Inconsistencies across the docs

Description:

• The naming conventions are messed up, some files have - while others have _.
• Some files start with capital letters while others start with small
• Does not use mintlify's full power wrt to the features like Steps, Expandables, or Panels
• Images take too long to load bc of the size
• Irregular capitalization of content in the docs

@kodjima33 @beastoin I'm sending a PR to update all of these things, our docs should be the best part for us to focus on the DX
