Update docs `vscode-ros2.rst`

Since the cleanup of our entire code base and new configuration in our bitbos_meta, we should rewrite and extend the vscode-ros2.rst documentation.

The debugging example is nice, but since the head-behavior has been replaced, there exists no good example.

We should write more on how to set up your VS Code correctly (always open in bitbos_meta directory, install recommended extensions, spell-checking dictionary, gotchas in committing new configs (hard-coded path inserted by ROS extension))
