Set SYNC_PREFER=newer by default

I have this set in my projects' docksal.yml files:

unison:
    environment:
      - SYNC_PREFER=newer

SYNC_PREFER (default: /source): Control the conflict strategy to apply when there are conflicts. By default the contents from the source folder are left unchanged but there is also the "newer" option to pick up the most recent files.

The forked project owner said he didn't see an issue with changing the default to "newer" instead.
