Update to Pydantic V2

I didn't see an existing issue for this, although there is an inline comment in the setup.py about potentially upgrading the version constraint.

I would like to make use of iiif-prezi3 but I can't because my project uses Pydantic v2 and currently iiif-prezi3 is still using Pydantic v1.

Pydantic v2 was released nearly 2 years ago. It looks like iiif-prezi3 is still alive and kicking with recent releases, so it would be great to update this dependency so that modern projects are able to make use of the library.

As we are re-generating the schema now it is proabably a good time to look at this.

Hi @glenrobson, I just wanted to follow up on this as I've run into some compatibility issues trying to parse some manifests for a project that seemed related. Any idea when this might be updated?

@mutherr This is on me. We were trying to get this done before the release today but ran into some issues with how we are generating our skeleton module. Our goal is to have this done for the next minor release which we would like out as soon as possible. Apologies for the delay.
