See e.g. page 7 of tagpdf.pdf, where it is impossible to guess some key names and the text only says 'This key' or 'These keys'. Admittedly, non-deprecated keys are less affected, so it is one way to discourage use of deprecated keys, but obviously may make it hard to understand older code. (In any case, I assume it is not deliberate or they would not be documented at all and some recommended keys are slightly affected.)

Sorry I don't understand what you mean. As far as I can see "this key" is nearly always used inside items of description lists and refer to the label of the item. On page 7 I see no this key or these keys at all (but I should there update the documentation to use the new tagging key.

And yes, I tend to remove documentation for deprecated keys, they are normally only in the code.

I find it is usually helpful to have a section at the end that simply lists deprecated keys or deprecated commands stating that these names are deprecated and will eventually be removed (or not depending on what the plan is) and that while existing their documentation is within the code. Rationale: people come across older documents that use such keys and if they try to find out what they mean (or why something broke) that gets them on the right track. Requiring more effort to find out the details is sensible because one do not want to keep such stuff in use forever.
