Updating to a new TOR address?

In the 'uris' section of the getinfo information the tor address of the node is shown.
Is it possible to use a new Tor address and if so how is it achieved?
Sorry I'm not a tor expert/dont know how this address the whole addressing setup is done. Is it even possible?
Related question, if a node was being censored how can you proceed against fighting that?
