What does this PR do?

This PR updates the docs/openapi.json file, automatically generated by utoipa and manually uploaded into this repository.

The openapi.json is rendered automatically in https://huggingface.github.io/text-embeddings-inference/, and should be updated as part of the release process in PRs as e.g. #686 from now on.
